Raw & Healthy Grasshopper Cookies



Cookie Base

2 cups almond flour

(use the nut pulp left over from almond milk that has been dehydrated and sifted OR grind raw almonds in the food processor until they turn into a very fine flour.  OR purchase almond flour from the health food store.  Sift through a strainer to get out the big chunks.)

2 cups raw cacao powder

¾ cups maple powder or sucanate

¼ tsp. salt

¾ cup coconut oil (melted)

1 Tbs. peppermint extract

1 Tbs. vanilla


Fudge Coating

¾ cups coconut oil (melted)

½ cup raw cacao powder

3 Tbs. maple syrup

pinch of salt




In large bowl, combine the almond flour, cocoa powder, maple powder and salt.


In separate bowl, combine the coconut oil with the peppermint and vanilla extract.  Mix the wet and dry ingredients together with your hands to make



Line a sheet pan with waxed paper.  Roll the dough as thin and evenly as possible.  Pour 1 cup of the fudge coating on top and spread evenly.  Place in refrigerator to chill and set chocolate.


Flip the chilled dough over onto another waxed paper lined sheet pan.  Pour the remaining 1 cup of fudge coating over exposed side of the dough and spread evenly.  Place in refrigerator to set chocolate.  Cut into squares and store in the refrigerator.
