Raw Chocolate Pudding

¼ cup raw coconut oil, melted

1 large avocado

1 cup cashews, soaked for 4 hours

½ cup raw honey

½ cup raw cacao powder

2 tsp. vanilla extract

½ tsp. salt

¾ cup warm water



Melt honey and coconut until liquefied. (This can be done at about 85 degrees in warm tap water).  Put honey, coconut oil, vanilla, water, salt and cashews in a high speed blender (I recommend a Vita Mix or BlendTech) and blend until smooth and creamy.  Add avocado and blend until smooth and creamy.  Add cacao powder and blend until smooth and creamy. The mixture will be warm and a little bit runny.  Don’t worry, because when you refrigerate it, it will thicken up.  Refrigerate for 4 hours.  Top with dairy free coconut whipped cream and fruit.  Eat within 2 days.
