Papaya Avocado Salad




1 large papaya, diced

2 large avocado, diced

1 large jicama, diced

1 Tbs. lime zest

¼ cup fresh mint, chopped very fine

½  tablespoons chopped toasted walnuts

Napa cabbage, shredded


Raspberry Vinaigrette

2 cups raspberries

¾ cup raw honey

½ cup raw apple cider vinegar

½ cup extra virgin olive oil

½ tsp. salt



Start with a bed of shredded Napa cabbage.  Top with avocado, papaya, jicama, and walnuts.  Drizzle dressing over top of salad.  If you are making enough for later, keep all ingredients stored in separate containers. Assemble the salad immediately before serving.
