Nutty Raw Chocolate Bars




1 cup raw cacao powder

½ cup raw cacao butter

½ tsp salt

¼ cup agave nectar or raw honey

1 tsp Vanilla


Honey Nut Candy

1/3 cup honey

½ tsp salt

1 tsp vanilla

2 cups chopped nuts





Grate cacao butter with a cheese grater.  Put it in a bowl.  Fill a bigger bowl with hot water and put the cacao butter bowl inside of it (double boiler style).  This will melt the cacao butter rapidly.  (Make sure not to get water in the cacao butter though, or it won’t set up)


Next, sift the cacao powder through a tea strainer to get out all the lumps, and slowly add it to the melted cacao butter and stir with a wire whisk.  This will get all the lumps out.


Next add your honey or agave nectar.  Keep adding the sweetener and tasting it until it is as sweet as you want it.  Add the salt, vanilla extract, mix well.


Spread evenly in a waxed paper lined pan.


Honey Nut Candy

In small saucepan, bring honey to a gentle boil over low heat. Turn off heat and add salt and vanilla.  Add chopped nuts and stir until well coated. Top Chocolate with Honey Nut Candy


Chill in refrigerator or freezer until firm but not hard.   Cut into small squares and wrap in waxed paper.  Store in refrigerator or freezer.
