Nutty Coconut Ice Cream




2 cans coconut milk

½ tsp. stevia

½ c xylitol

1 t natural coconut extract (optional)

½ cup coconut oil


½ cup raw sliced almonds

½  cup shredded coconut (non sweetened, no sulfur)




Combine all ingredients except coconut and almonds into a blender.  Blend until smooth.  Chill and pour into ice cream maker.  Process according to manufacturer’s directions. When ice cream is solid, mix in coconut and almonds and transfer to airtight container.  Store in freezer.
