Hearty Italian Salad




½ cup olive oil

1 lemon, juiced

¼ cup apple cider vinegar

3 Tbs. honey

2 tbs. dried Italian seasoning OR ½ cup fresh garden herbs (basil, oregano, etc.)

¼  tsp. salt

1 tsp. pepper



Romaine lettuce, chopped

Tomato, diced

Black olives, sliced

Kidney beans, rinsed and drained

Brown rice penne pasta, cooked and cooled

Sundried tomatoes, chopped

Artichoke hearts, chopped

Red peppers, sliced thin

Red onion, chopped very small

Green onion, chopped

Fresh basil, torn

Marinated or sautéed mushrooms

Raw Parmesan cheese**



Chop all salad ingredients into bite-sized pieces and combine in a large bowl.  Combine dressing ingredients together. Pour over salad and toss. Top with fresh basil and raw Parmesan.
