Dairy Free Sour Cream

Ingredients

1 cup cashews soaked for at least 4 hours

juice of 1 lemon

½ tsp. salt

¼ tsp. probiotic culture

 

Directions

Soak Cashews for 4 hours.  Drain and rinse, then blend in Vita Mix with lemon and salt until smooth and creamy.  Add a little water if necessary to help blend it.  Transfer sour cream to a glass bowl and stir the probiotics in by hand. Let sour cream sit at room temperature for 12-24 hours (depending on how tart you like it) and then refrigerate.
