Dairy Free Cheese Sauce

1 large red pepper

1 cup soaked cashews

2 Tbs. sesame seeds or 1 Tbs. Tahini

3 Tbs. Nutritional Yeast

2 Tbs. onion

3-4 cloves garlic

2 Tbs. freshly squeezed lemon juice

1 tsp. mineral rich salt  (optional)




Put all ingredients in a high-speed blender.  Blend until smooth and creamy.  Use

in a variety of ways.  For instance:

Vegetable or chip dip

Cheese sauce over steamed broccoli, cauliflower, or asparagus

Add salsa for mexi-cheese dip

Pour over noodles for dairy free macaroni and cheese

Mix into brown rice or quinoa for a cheese risotto
