Chipotle Sour Cream



1 cup cashews, soaked for several hours

1 lemon, juiced

½ tsp. salt

½ chipotle pepper or ¼ tsp. powdered chipotle pepper




Blend all ingredients in high-speed blender until smooth.  Store in refrigerator for up to 5 days.
