Caramel Popcorn


1 cup popcorn kernels

¼ cup coconut oil

¼ cup honey or agave

½ tsp salt

1 tsp vanilla



Air pop the popcorn according to manufacture directions.  While it is popping combine the coconut oil, honey, salt and vanilla in a saucepan, and heat at low temperature until melted.  Drizzle over the pop corn (stirring well to coat evenly). Spread coated popcorn on a cookie sheet and bake at 200 degrees for 15-20 min, stirring frequently or until golden brown. Let cool, and the popcorn will be crispy
