Broccoli Waldorf Salad

Ingredients

4 cups fresh broccoli cut into bite sized pieces and steamed

½ cup raisins

1 small sweet onion, chopped

2 apples chopped

2 cups celery, chopped

2 cups grapes, halved

1 cup green onions, chopped

1 cups toasted pecans or walnuts, chopped

1 cup raw mayonnaise (recipe below)

½ cup raw honey

¼ cup apple cider vinegar

salt and pepper to taste

¼ tsp. nutmeg

 

Directions

Cut fresh broccoli into bite size pieces.  Steam until it turns bright green.  Immediately pour into a colander and run under cold water to cool.  Drain broccoli and set aside.

 

In small bowl, combine mayonnaise, honey, vinegar, salt, and pepper and nutmeg.  Toss Broccoli with this sauce until well coated.  Add chopped onions, apples, walnuts and raisins, mix well.  Refrigerate and serve cold.

 

Raw Mayonnaise

1 cup cashews soaked for at least 4 hours

3 Tbs. apple cider vinegar

2 Tbs. raw honey

1tsp. salt

Blend in Vita mix until smooth and creamy.
