9 Layered Bean Dip

Ingredients

2 cups refried beans (see recipe)

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 cup pickled jalapeño slices, chopped

1 bunch green onions, sliced

1/2 cup salsa or Pico de Gallo (see recipe)

1/2 cup  Mexi-Cheese Sauce (see recipe)

1/2 cup cashew sour cream (see Recipe)

1 tomato, chopped

1 avocado, chopped OR 1 cup guacamole (see recipe)

1/4 cup canned sliced black olives, (optional)

1 1/2 cups chopped romaine lettuce

 

Directions

Combine refried beans, cumin, chili powder, and jalapenos together in a pan.  Warm on medium heat stirring regularly, until steaming hot.  Spread evenly on the bottom of a 9×13 pan.  Layer remaining ingredients (except romaine) on top of beans.  Serve over a bed of romaine lettuce, or with chips.
